Dining customs would involve the times of day for meals, whether it tends to be a big family time where people linger.
This effects the food served. If meals are an event you might start with a small salad, then a soup, then a main course and dessert. Each serving would be on the smaller side but have more courses.
In Chinese cuisine, people eat from communal bowls. You don’t order an individual meal, you all share what is brought. Appetizers are more of a western idea.
I know of a pizza company that tried to launch in Japan and failed because they didn’t understand the dining customs there.
Good luck.

In many European countries, they eat their heavier meal at mid-day and then a lighter meal late in the evening (usually much later in the evening then Americans). Italian custom is to eat with the whole family and anyone else that comes along (if there’s room in the heart, there’s room at the table), and it is often noisy with lots of conversations going on at once (loudly), plates being passed around. For regular Italians, they tend to drink wine with their mid-day and evening meals, and not in wine glasses (they use these nifty little “juice” glasses). Sharing food is a joyous and warm occasion no matter what meal it is and family usually gravitates to the kitchen during preparation. And dessert is often not something sweet but cheese and fruit. It is also customary for the men to leave all the clean up to the women (often the cooking too but there are men who love to cook). And you have pasta at almost mid- or evening meal.
